While many think of frying or blackening catfish, one of my favorite ways to prepare it is baking. This mild, white fish cooks so quickly – making it perfect for a quick weeknight meal. A simple lemon butter sauce made from items you most likely have on hand elevates the dish.

Crispy fried fish is a staple in the South. But let’s all be honest, sometimes on busy weeknights, we want to have the crispy-crusted fish without having to deal with the mess of frying. I have found that panko bread crumbs seasoned with a little Southern spice can give a piece of baked fish a crispy coating that makes all of the fried fish lovers at my dinner table happy. Plus, it’s a healthier option than traditional frying.

This recipe is my play on the iconic New Orleans dish of Trout Amandine. Instead of trout and almonds, I use the Southern ingredients of Mississippi Delta raised catfish and Delta pecans. This delicious dish can be enjoyed at home with this surprisingly easy recipe.
