Spinach & Mango Salad with Air-Fried Catfish Strips

When air frying catfish, it’s important to preheat the air fryer to ensure even cooking and a crispy texture. Patting the catfish dry and seasoning it before breading helps the breading adhere better and adds flavor to the fish. Coating the catfish in a light layer of cooking spray before air frying helps to achieve a crispy and golden-brown crust.

Cooking times may vary depending on the size and thickness of the catfish fillets, but a general guideline is to cook them at 400°F for about 10 minutes on each side. It’s always a good idea to check for doneness by using a meat thermometer; the internal temperature should reach 165°F.

Ingredients

  • 2 Delta Pride Catfish fillets, cut into strips
  • 1 teaspoon kosher salt
  • 1⁄2 teaspoon freshly ground black pepper
  • 1 cup fish fry breading
  • Cooking spray
  • 1 bag of spinach
  • Red onion, thinly sliced, for garnish
  • 1⁄2 cup of diced mango, for garnish

Mango Vinaigrette

  • 2 mangos, peeled and diced
  • 2 lemons, juiced
  • 1 tablespoon dijon mustard
  • 1 tablespoon cider vinegar
  • 2 tablespoons honey
  • 1 cup salad oil

Instructions

  1. Preheat the air fryer to 400° F. Pat the catfish dry with a paper towel. Season with salt and pepper, and then coat in fish fry breading. Lightly spray the breaded catfish strips with cooking spray.
  2. Place the catfish in a single layer in the basket of the air fryer. Cook for 10 minutes. Remove the basket, flip the catfish, and cook for an additional 10 minutes.
  3. Set aside 1⁄2 cup chopped mango for garnish.
  4. Combine mangos, lemon juice, mustard, vinegar, and honey in a food processor and blend until smooth. Drizzle in salad oil while blending until smooth.
  5. Place spinach in bowls and top with Catfish, mangos, and thinly sliced red onion. Drizzle with mango vinaigrette.
