Delta Pride Grilled Catfish with Peaches and Red Onion

Just made this delicious Grilled Catfish with Peaches & Red Onion – it‘s the perfect summer dish!

Ingredients

4 Delta Pride Catfish fillets
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon ground black pepper
6 peaches, peeled, halved, and pitted
2 large onions, sliced into thick rings
1/8 cup sugar
1/4 cup white balsamic vinegar

Instructions

PREHEAT grill over high heat.

PLACE the catfish on a plate, drizzle with 1 tablespoon of the oil, and season with salt and pepper.

PLACE the peaches and the red onion on another plate, and drizzle with the remaining oil.

PLACE the onions and peaches on the grill.

GRILL onions for 10 minutes and the peaches for 5 minutes, turning regularly to avoid burning.

REMOVE from the grill, and place on a cutting board.

Roughly CHOP them, and place them in a bowl; add sugar and vinegar.

PLACE the catfish on the grill, cook for 4 minutes, turn and cook another 4 minutes or until cooked through, and remove from the grill onto a platter.

SERVE with peach mixture spooned over the top.
